Creamy Mustard Chicken

Ingredients – Serves 2

200g mixed mushrooms

1 red onion

2 200g boneless, skinless chicken breasts

2 tsp wholegrain mustard

100ml fromage frais / fat-free natural yoghurt

100ml water

Method

Place a 12-inch non-stick frying pan on a medium-high heat and place all the mushrooms in the dry pan. Let them toast and get dark golden and nutty, tossing occasionally

Meanwhile, peel and finely slice a medium red onion

Trim and slice the chicken breasts into 2cm thick strips.

When the mushrooms look good, add the onion and chicken to the pan with 1 tablespoon of olive oil

Cook for 5 minutes, tossing often

Add the mustard, fromage frais and water

Bring to the boil, reduce the heat and simmer until the chicken is cooked through and the sauce has visibly thickened

Throw in a handful of roughly chopped spinach leaves, season with a little black pepper and serve

Substitute pork, steak or salmon for the chicken, this recipe works just as well with either

Nice enough on its own, but also good served with carrot, green beans and new potatoes
